The Secret Kitchen is our regular evening dining experience, where our chefs take inspiration from the season to create a delicious five-course tasting menu. Expect thoughtful cooking, beautiful ingredients and a menu designed to surprise and delight, all served in the welcoming surroundings of Babylon.

The menu

First course
Taleggio and saffron arancini, spiced paprika aioli

Second course
Gorgonzola, poached pear, candied walnut, winter leaves

Third course
Mussel soup ‘alla Neopoletana’ with cannellini beans, white wine, tomato, garlic and parsley
Or
Winter vegetable ribollita, with cannellini beans and sourdough croutons

Fourth course
Ashdown Forest venison ragu, parmesan creamed polenta, Babylon cavolo nero, rosemary pesto and jus
Or
Babylon grown crown prince squash and cavolo nero, pappardelle, nutty butter, squash cream and parmesan, crisp sage
